Why We Don’t Chase Tasting Notes

Coffee comes with a lot of opinions.

Tasting notes printed like promises.

Flavour wheels.

Descriptions that read more like wine labels than something you drink every day.

None of it is wrong.

It’s just not what we’re here for.

Tasting notes can be useful.

But they can also get in the way

They tell you what you should taste.

They turn a simple cup into something you feel like you need to evaluate.

That’s not how most people drink coffee.

Most of us make it half awake.

In the same mug.

At the same time every day.

We care more about how coffee fits into your routine than how it reads on a bag.

Does it taste good?

Does it feel right for the moment you’re in?

That’s enough.

We roast for balance.

For consistency.

For coffees you can come back to without thinking too hard about them.

You don’t need to pick out berries or chocolate or citrus to enjoy it.

You don’t need to name anything at all.

If you notice something, great.

If you don’t, that’s fine too.

Coffee shouldn’t feel like a test.

It should feel familiar.

Comforting.

Reliable.

That’s why we don’t chase tasting notes.

We’d rather make coffee you enjoy drinking —

not coffee you feel like you have to understand.
